Firstly, the tigernut is not a nut at all. It’s a tuber—or root vegetable—that grows underground, like potatoes and yams. About the size of a chickpea, the tigernut features a familiar striped pattern, which earned it the name “tiger nut.” In other parts of the world, tigernuts are sometimes called chufa nuts, earth almonds, cyperus esculentus or the grains of Al-Aziz.  

The tigernut has been consumed for much of human history. Considered an ancient superfood, it comprised about 80% of our paleo ancestors’ diet around 2 million years ago. Today, the tigernut is consumed and enjoyed in many different forms—ground into tiger nut flour for baking and cooking, eaten raw or roasted on its own, or transformed into a delicious beverage like “Kunun aya” or “omumu milk.”
